Bought this and two others for my niece. Her 3 boys love using it to help them prepare vegan meals. They have made many and love all three books.

There are a number of reasons that people choose to follow a vegan diet, among them including the health benefits of a plant-based diet, animal cruelty concerns and also just plain moral objections to animal-based foods. Regardless of the reasons, there is a need for resources for vegans to prepare good foods at home which is much cheaper that eating out at specialty restaurants. This book is one of many available for vegan cuisine and like most DK books I have seen it’s a good one. Interestingly, there are provisions made for non-vegan diners on many of the recipes included therein.Full disclosure: I am not a vegan or even a vegetarian, I am a full-fledged meat eater. However, I recognize the healthy side of eating vegan and vegetarian dishes and I am not unwilling to forego meats, eggs, cheese and even fish. Some vegan dishes can actually be better-tasting than their non-vegan equivalents.The first section of this book deals with a lot of basic information that many new to a vegan diet will find very interesting and informative. It’s not a simple “this is why you should eat a vegan diet” type of presentation, either – instead, this section discusses how to make substitutions for non-vegan ingredients, how to balance the diet, how the body uses different vitamin types an a lot more. For many this might be a review, but for others it very well may be a real eye-opener to the benefits of a healthy lifestyle. It avoids getting into philosophical discussion about why one lifestyle is better than another.After all the introductory material and information, the book presents nine chapters of recipes broken down by type: Breakfast/Brunch, Snacks Foods, Soups/Stews, Burgers/Sandwiches/Wraps, Pasta, Grains, Salads/Side Dishes, One-Pot Meals and finally Desserts. The breakdown is logical and things are easy to find. The index at the back makes finding recipes easy and it is well organized (not all cookbooks are so lucky).Almost every recipe has a full-color picture included which makes finding something that not only sounds interesting but looks good very simple to find. I especially like the section on soups and stews and have found several recipes to try in there. One recipe in particular stood out though – lentil & mushroom burgers. As odd as that may sound to a non-vegan, lentils actually make a pretty convincing substitute for ground beef (in fact, we occasionally have vegetarian tacos made with lentils in this house, and I actually prefer them to beef tacos for the better texture). That one is getting made shortly.Where this book really shows that some serious thought went into it is in the “Flex It” tips with many of the recipes. These offer suggestions on what can be added to recipes to make them appeal more to traditional vegetarian diners, pescaterians and even meat-eaters. This makes the recipes a lot more flexible and appealing to more diners who might desire more than a straight vegan dish, without compromising the meal for the whole family. For example, one of the risotto recipes has a tip suggesting adding a little Parmesan after the fact to add cheese for the vegetarian, which can be done on a plate-by-plate basis. Another risotto recipe suggests adding a small amount of shrimp for the pescaterian, which again can be added per plate instead of to the whole dish.Because of the willingness to make small, optional concessions to other dietary types, this book provides a great transitional path to go from most other diet types to a vegan lifestyle. For those that just have to have cheese or can’t live without just a little fish once in a while, the recipes presented herein provide a way to phase out the things that are non-vegan rather than an abrupt switch which may be distressing.I like this book and am happy to recommend it. It presents a very good collection of well-thought-out recipes that follow a vegan lifestyle but can be tweaked and adjusted for non-vegan diners too. If you are a full-fledged vegan, you’re considering transitioning to vegan dining or you are just looking to reduce meats and dairy from your diet, this is a fine place to find some answers to questions and recipes to prepare. It’s well organized, well-thought-out and non-confrontational.

I didn't read the opening section to this book, I just skipped right to the recipes. Overall, I found the recipes to be relatively simple to follow. The ingredients, for the most part, weren't crazy things that I couldn't find, though I did substitute a few things here and there, like spices and type of bean.Each recipe comes with a prep time and cooking time that I found to be a tad inaccurate. Prep time is always going to vary by person. Some of the recipes were very quick to prep, and some took three times as long. Anytime I have to chop up a bunch of vegetables, it's going to take me a long time, but I know this so I start those recipes earlier and make them on a day when I have time for all that. But I really like that there are variety of recipes in here, ranging from pretty quick and easy to more advanced. Some of them are recipes I've never tried to make myself before like the Winter Vegetable Pot Pie, which will definitely get easier and faster to make the more I do it, and I plan on making that one again for sure.The recipes I've tried are tasty and filling, so no complaints at all with the actual food involved. If I was going to nitpick on something, it would be the "flex it" bubbles that pop up periodically for some of the recipes. I thought having asides for how people can add animal products to a meal if they want defeats the purpose of a vegan cookbook, in my opinion, but it's probably explained in the opening section, and I can see how it's probably good for people who are transitioning to a plant-based diet or just wanting to try some vegan meals.In any case, I'm very happy I have this and look forward to trying more new to me foods. Also, the pictures in the book are beautiful, and I always appreciate that in a recipe book.

Organized logically the book begins with Vegan Basics which is a fact based, user-friendly chapter packed with information on how to eat a well-balanced Vegan diet without a degree in nutrition. Recipes follow and are divided into the following categories--Breakfast and Brunch, Snacks and Light Bites, Soups and Stews, Burgers, Sandwiches and Wraps, Pasta and Noodles, Pulses and Grains, Salads and Sides, Casseroles and One Pots, and Desserts.There are over 100 recipes and they offer a good mix of flavors with most including a photo which serves as a guide as to the expected finished result. Some recipes include specialty ingredients but many components revolve around a basic group of frequently used items that will be essentials in a Vegan pantry.The dishes are imaginative with even basic recipes well-seasoned to avoid blandness. Required cooking skill level ranges from novice to intermediate with some recipes including a long list of ingredients. Suggestions for variations are offered along with how to incorporate meat to satisfy a family members, but the user can always adapt dishes to suit their taste using the recipes as a starting point to get the ideas flowing.The hardback book is sturdy, designed to survive repeated handling and the dangerous of the kitchen. The binding can be gently bent so the book lays flat on the counter top, open to any particular recipe for easy reference. The book uses black ink for the ingredient list and recipe instructions, not hard to read pale colored inks, but the font size is, as is typical, very small—8 or 9 point with the cross-referenced index even smaller. So, expect to bend in close or use readers. Solid information with creative recipes.
